
From Grain to Glass: Inside Our Brewing Process
Most people who walk into 2nd Wind never see the part before the tap wall. The grain sacks. The tanks. The days of waiting before a batch is ready to pour. We figured it's worth showing.
It starts with the grain
Every batch starts as grain, not a finished product. We source it locally wherever we can, because "locally sourced" should mean something more specific than a label. Our Captain's Choice Lager is Alberta-grown, brewed and finished right here in Sylvan Lake.
Then it's mostly waiting
Brewing isn't glamorous. It's tanks, temperature, and time. A batch doesn't get rushed to make a deadline. It's ready when it's ready, which is part of why our tap list rotates instead of staying static, some beers take longer to get right than others.
Quality check before it ever reaches you
Before anything goes on tap, someone on our team tastes it, right at the tank, not after it's already poured for a guest. If a batch doesn't clear that check, it doesn't make the tap wall. We've scrapped recipes we liked because they didn't hold up on a second taste.
Why we bother showing you this
We'd rather you see how a pint gets made than just tell you it's good. Next time you're in, ask a staff member what's fermenting right now, they'll usually know exactly where in the process it is.
